Wonderful structure with aromatic lift! Stone fruit and white flower. The Pedroncelli family winery has been producing the Fumé Blanc since 1972 on the Sonoma Valley floor. Looking to emulate the now well known wines of the Loire Valley, this wine achieves it's Sancerre-esque character through the use of stainless steel fermented Sauvignon Blanc resulting in a crisp wine with clear focus. The nose belies the sauvignon blanc's signature citrus and tropical fruit. On the palate, there is a bit more intensity with savoury herbs peaking just behind the mineral character of this bottling. Drnik cold and drink fresh!

Dark Fruit, chocolate, patchouli. Cool Kid Red but reads as Classic CA Cab. The Chroma is an extremely small production Paso Robles Cabernet Sauvignon at only 456 cases. This vintage is a bit young, but that's not to it's detriment. It's bold presence on both the nose and on the palate are exactly what Paso is known for, but if you decide to pick up a bottle, dont be afraid to cellar it and come back in a year or five!
#7 Petit Natural - Willamette, Oregon 11.5% ABV
Full Pour - $14
Taste - $8
A Fruity, fun and very approachable pet nat! The wine was barrel fermented and bottled before primary fermentation was complete (like all petnats) to capture the naturally occurring CO2 in bottle. The wine is left undisgorged, as we hope that some of the lees that give chardonnay much of its character, land in the glass. And the wine was only made using grape juice, no SO2 or any other additives used.
#8 Wild Card Red - Utiel Requena, Spain - 13% ABV
Full Pour - $16

Kirsch, smoked Strawberry, Earl Grey I know, the description is wild, but with good reason. Camille and Mathias Marquet have been battling frost since 2017, the first year in a long time the frost took an entire harvest. Through immense grit and hard work, these winemaking vanguards against climate change in turn are able to eke out wild and expressive wines like this one. Expect the breakdown to change drom year to year. This year is 60% Merlot and 40% Cabernet Franc. Cherry cola, winter melon, purple fruits, and cannabis all come through on the nose. Blackberry, fernet, and mint leaf all taste overripe on the tongue. A spherical texture with a crunchy, green, and peppery aftertaste. Drink chilled as an aperitif or with a heavier meal as a refreshing side.
#1 Mead / Honey Wine - 14% ABV

Fresh ginger and sweet honey. Ginger is a full-throated, unapologetic expression of pure grated ginger and honey. Honey sweetness is balanced by full ginger flavor with a touch of spiciness, making this mead a perfect choice to pair with spicy Indian, Ethiopian or Thai cuisine, grilled Korean mackerel or flavorful sushi and sashimi. It also pairs well with dark chocolate and is a great addition to a whiskey ginger cocktail or a moscow mule.

Living up to it’s name, this mead truly makes a statement due to its incredible expression and depth of flavor and character rendered from honey and Michigan tart cherries. A natural complement to chocolate and sharp or blue cheeses, The Statement also pairs well with grilled pork, and makes a terrific reduction sauce for desserts.
