Chenin Blanc, 21 days of skin contact, 100% natural yeast. White peaches. his wine is totally natural. Nothing other than pristine fruit from the Jurassic Park Vineyard was used or added in its creation. After harvesting Chenin from the 35+ year-old vines, we crushed and destemmed the fruit as we would when making a red wine. The juice and skins were left together for 21 days. The wild yeasts that were present on the skins of the grapes completed the fermentation and the natural anti-oxidants on the skins provided all of the protection necessary during elevage (9 months in neutral oak) and bottling.

Fresh ginger and sweet honey. Ginger is a full-throated, unapologetic expression of pure grated ginger and honey. Honey sweetness is balanced by full ginger flavor with a touch of spiciness, making this mead a perfect choice to pair with spicy Indian, Ethiopian or Thai cuisine, grilled Korean mackerel or flavorful sushi and sashimi. It also pairs well with dark chocolate and is a great addition to a whiskey ginger cocktail or a moscow mule.
