Pearl Morisette Irreverence Blanc

#1 White - Ontario, Canada - 12% ABV

Ripe peach, orange rind, salinity Irrévérence is a blend of 51% Chardonnay from the Redfoot and Home Farm vineyards, 26% Viognier from Redfoot vineyard, 19% Pinot Noir from Home Farm vineyard (processed as white juice) and 4% Riesling from Redfoot vineyard. Part of the Viognier and the Riesling spent 6 months on their skins in qvevri (amounting to 13% of the total blend); Pinot Noir was fermented and aged in foudres, as was the rest of the Viognier. The Chardonnays were fermented and aged in a combination of foudres and demi-muids. All the wines were blended a year after harvest and spent additional 8 months aging in a combination of old foudres and puncheons. A textural, sort of orange, but not really, aromatic wine that's supposed to mess with your senses a bit.

Strawberry, fruit punch, grapefruit A wild and woolly blend of Gewurztraminer, Muscat, and Pinot Gris. Funky yet flavorful, with lots of fruit. Carries its alcohol well.

Maison Noir New Noir

Ripe stone fruit, funky acidity, grippy tannin A skin contact “Northwest Edelzwicker” of sorts, a diabolical blend of 50% Gewurztraminer, 28% Pinot Gris , 12% Riesling, 5% Muscat, and 5% Pinot Blanc: Stone fruit potpourri, racy acidity with a sprinkle of molten salt!

#5 Rosé - Emilia-Romagna, Italy - 11.5% ABV

Sour plum, nectarine, hibiscus Consisting of 97% Sauvignon Blanc and 3% Langonesi from Emilia-Romagna, Italy this wine shows notes of hibiscus, nectarine, sour plum and hint of honey.

Pas Touche Chinon

#6 Light Red - Chinon, France - 12% ABV

Red fruit, green bell pepper, dried herbs Fresh, light bodied, elegant Cab Franc from Chinon appellation in the Loire. Juicy and lively acidity with intense red fruits and silky tannins.

Jeff Carrel Les Darons

#7 Bold Red - Languedoc, France - 13% ABV

Ripe dark fruit, garrigues, baking spice 70% Grenache, 20% Syrah, 5% Carignan. Packed with dark fruit aromas and delicious spices, the wine’s mineral streak maintains a tension and balance with the denser fruit. Silky smooth tannins round out the palate.

Tropical fruit, tannin, fresh hops 100% Chardonnay pet-nat infused with hops. Lots of hop aroma, with a typical clean pet-nat flavor profile that finishes with a kick of hop bitterness.

Floral honey and lychee This is a sweet pyment (grape & honey wine) made with wildflower honey & Malvasia Bianca grapes both sourced from Valley Center, San Diego County. It tastes of honey, lychee, with a distinct floral note.

Schramm's Raspberry

#2 Mead / Melomel - 14% ABV

Unmistakably.. raspberry Schramm’s Raspberry is a mead made from whole Michigan raspberries. The flavor is unmistakably fruity raspberry, reminiscent of Michigan summers, and is balanced by honey sweetness. Due to the high level of acidity from the berries, it can age gracefully for many years. A tribute to our home state’s strong fruit growing tradition, this was the first mead made by head meadmaker Ken Schramm. It holds a special place in our history as well as our cellar. This melomel pairs well with grilled Great Lakes salmon, salads, cheesecake, and summer evening bonfires by the lake.
